Les Bouffants

Sancerre Blanc AOP

Our Bouffants single vineyard is located on one of the best ‘Caillottes’ terroirs of the Sancerre appellation. It is a south facing, gentle slope, made of clay soil covered with small white limestone stones that reflect the sun’s rays on the grapes and thus hasten the grape maturity.

Single-Vineyard Cuvées

Single vineyards’ wines are the essence of Domaine Fournier Père et Fils’ philosophy. They are selected based on in-depth knowledge of our terroirs. Only parcels with exceptional ‘climates’ are included in the selection.
Equivalent to the ‘Grands Crus’ in Burgundy, we’ve decided to grow them and ferment them in very small volume with the greatest attention. The volumes produced each year are very limited and may vary depending on the vintage.

Our Les Bouffants vineyard is harvested with care, at perfect maturity. The extraction of the juices is done at low pressure before the cold storage on it’s fine lees for 6 to 8 days prior to the start of the fermentation. The juices are fermented at low temperatures and then aged on their fine lees for 10-12 months with a weekly batonnage to reveal all the richness and the complexity of this beautiful vineyard.

The delicacy and elegance of Les Bouffants are a delight with a Dover sole on its mashed potatoes with white truffle emulsion.

94 pts / Implicitly mineral and ashy character, together with sliced apples, lime and some refined gooseberry and grapefruit. This is bone-dry and mineral, with a sleek, creamy mid-palate and a flinty finish. Delicious now, but will hold for a few years, too.

90/100 – ‘Flinty and foreboding on the nose, but creamy and zesty on the palate, showing Greek yogurt, lime curd, green apple, and pear peelings. The finish is consistent with a hint of crushed chalk underneath the malic apple fruit. ‘

92 points / Subtle and fine-textured with sliced lemon, pear, flint and some ash. It’s medium-bodied with freshness and brightness. Lively finish. Drink now.

May 20 2018

94 points / One of a series of limited-production, single-vineyard wines, this is densely textured and strongly mineral. It is rich with perfumed green fruits, herbal hints and tight, textured acidity. All these elements need to age further, so drink from 2021.

92 points / One of a range of single-vineyard wines, this is concentrated and maturing well. It has developed flavors of green herbs such as coriander as well as an edge of maturity. It is at just the right moment and is very ready to drink now.
