{"id":20,"date":"2020-09-02T14:10:30","date_gmt":"2020-09-02T12:10:30","guid":{"rendered":"http:\/\/www.fournier.local\/?post_type=accord&#038;p=20"},"modified":"2021-01-27T15:11:51","modified_gmt":"2021-01-27T14:11:51","slug":"osso-bucco-with-cherry-tomatoes-and-sun-dried-tomatoes","status":"publish","type":"accord","link":"https:\/\/www.fournier-pere-fils.com\/en\/accord\/osso-bucco-with-cherry-tomatoes-and-sun-dried-tomatoes\/","title":{"rendered":"Osso Bucco with cherry tomatoes and sun-dried tomatoes"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\"><strong>Ingredients for 2 people<\/strong><\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li>2 veal shanks (or beef or pork)<\/li><li>1 tablespoon of flour <\/li><li>1 garlic clove, thinly sliced <\/li><li>1 chopped onion 150g (6 oz) of finely chopped \u200b\u200bvegetables (carrots, fennel, leek, celery) <\/li><li>500ml (17 fl oz) white wine (dry Sauvignon Blanc) <\/li><li>500ml (17 fl oz) of Madeira wine <\/li><li>1 can of peeled diced tomatoes <\/li><li>20 sun-dried tomatoes <\/li><li>10 cherry tomatoes <\/li><li>Bay leaf, sprig of rosemary, sprig of thyme <\/li><li>Salt, pepper, Olive oil<\/li><\/ul>\n\n\n\n<p><\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Instructions<\/h4>\n\n\n\n<p>-Prepare the vegetables, onion and garlic. Place the meat on a plate and lightly flour each side.<\/p>\n\n\n\n<p>-In a casserole dish, heat the olive oil. Sear the shanks for 2 minutes on each side until golden brown. Salt and pepper and set aside.<\/p>\n\n\n\n<p>-Add a little more oil to the casserole dish. Add the onion, garlic and bay leaf. Saut\u00e9 for a minute. Add the vegetables, rosemary and thyme, season with salt and pepper and continue to saut\u00e9 for one minute.&nbsp;<\/p>\n\n\n\n<p>-Add the wine and Madeira, stir well with a wooden spoon, scraping the bottom of the casserole dish to loosen the meat juices and simmer for two minutes.&nbsp;<\/p>\n\n\n\n<p>-Add the peeled tomatoes and simmer for 2 more minutes. Add the meat and cook covered and over medium heat for 40\/50 minutes.<\/p>\n\n\n\n<p>-5 minutes before the end of cooking, add the sun-dried tomatoes and the cherry tomatoes.&nbsp;<\/p>\n\n\n\n<p>Finish cooking and serve with mash potatoes, polenta or a creamy risotto.<\/p>\n\n\n\n<p>This Osso Bucco is begging for a medium bodied red wine with natural mouth-watering acidity to match the tartness of the white wine and tomatoes. A young Pinot Noir, <a href=\"https:\/\/www.fournier-pere-fils.com\/en\/vin\/lancienne-vigne-2\/\">L\u2019Ancienne Vigne Sancerre Rouge 2018<\/a>, will perfectly compliment this dish.<\/p>\n","protected":false},"featured_media":795,"parent":0,"template":"","class_list":["post-20","accord","type-accord","status-publish","has-post-thumbnail","hentry"],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v26.0 -
